JAPANESE CHEF'S KNIVES
The Japanese have a long tradition of blade making, borne from the skill of master Samurai sword-SMITHS. Drawing on that tradition, our RANGE of chef’s knives has something for everyone who loves to cook:
‘Tetsuhiro’: for anyone who WANTS the feel of a Japanese knife at an affordable price.
‘Niwaki Carbon’: hand-forged white paper carbon steel, wrapped in softer ‘Jigane’ steel, with the result that every knife is truly a one-off.
‘Western Gyuto’: has the look that most of the World is used to. The difference, though, is the extraordinarily sharp, wrapped blue carbon steel blade.
‘Bubinga’: quite simply the most beautiful and effective all-round chef’s knife we have ever come across (& we’ve tried a few!). a western-style handle and artisan-crafted blue carbon-wrapped blade. wonderful patina. absolutely unique.
We also have a couple of the best sharpening stones available - oh, and a little gem of a quintessentially Japanese fruit knife.
